It’s So Easy Cranberry Cobbler
• 1 can Whole Cranberries
• 1
can Crushed Pineapple, Drained
• 6 McIntosh Apples, Shredded
• 1 teaspoon Cinnamon
• 2 cups Oatmeal
• 1 1/2 cups Unbleached Flour
• 1
1/3 cups Brown Sugar
• 1 cup Butter or Margarine, Softened
Preheat the over to 350º F. Mix
the fruits with the cinnamon. In a separate bowl, mix the dry ingredients with the butter or margarine. Grease a 13”
x 9” pan. Place half the oatmeal mixture on the bottom of the pan. Spread the fruit mixture evenly in the pan. Crumble
the remaining oatmeal mixture on top. Bake for 40 minutes.

This time of year, more people stop their routines to count their blessings and give thanks. Some only
do it at their holiday tables. Others do it at work, in stores, at the gym, on the train, in the library, or anywhere they
go.
Even in New York, you can catch a glimpse of a few genuine smiles, as people begin to feel
gracious during the holiday season and express their gratitude for everything they have to be thankful.
Some
years, it’s more difficult than others to remember all, or any, of our blessings. Life’s challenges and disappointments
confront us whether we think we’re ready for them or not.
For most of us who have reached
the big 4 – 0 and beyond, we’re learning that as we continue our journeys there are bumps in the road, obstacles
to hurdle, and even unexpected breakdowns.
Since this time last year, some of us lost jobs, some
hated their jobs, some gained weight, some overspent, some found themselves unhappy or unsatisfied, some closed their businesses,
some ended relationships, some lost loved ones, and more . . .
But even with everything we’ve
been through, there is so much for us to be thankful. We’re fortunate to be alive and free, lucky to still have the
opportunity to find the strength to overcome our challenges, and privileged to work for a better future — for ourselves,
our families, and those who cannot do so themselves.
For this and so much more, I’m grateful
and feel truly blessed.
